Does anyone know if they all have to be chanted out loud or just the ones he says, and if you can use more than one at a time?

They work as many times as you make them. You don't have to outloud but it helps. Don't overthink it just chant and focus.

To properly serve the purpose of the chantting repeat it in a steady and consistant rate and tone. Your mind should be clear and your focus on the intent. Dont think about what you're saying just keep chantting and this will help work subconsciously, where the root of your control is. Using the Ohm, the humming noise monks use as you've probably seen in movies, achieves this even more effectivly for reasons previously stated.

There is no "proper" position. Go with what feels right. Some hold them together as a prayer or their palms facing up to the sky. Just do what comes natural to you.
